The Chemex pour-over is a classic and elegant method for brewing filter coffee. It elevates the brewing process into a ceremony, allowing you to experience the true essence of your coffee. Step 1: Gather Your Equipment

Before you begin, make sure you have all the necessary equipment:

  • A Chemex brewer
  • Chemex filters
  • A kettle

  • Freshly roasted coffee beans

  • A gooseneck kettle (optional, but recommended)

Step 2: Grind Your Coffee

Grind your coffee beans to a medium-coarse consistency. This will ensure optimal extraction and a balanced flavor profile. Aim for a grind size similar to sea salt.

Step 3: Preheat Your Chemex

Place a Chemex filter in the brewer and rinse it with hot water. This will remove any paper residue and preheat the brewer, ensuring a consistent temperature throughout the brewing process. Discard the rinse water.

Step 4: Add Coffee and Bloom

Place the ground coffee into the Chemex filter. Start by adding a small amount of hot water (twice the weight of the coffee) to saturate the grounds. Allow the coffee to bloom for 30 seconds. This allows the gases to escape and ensures an even extraction.

Begin pouring hot water in a slow, circular motion, starting from the center and moving outward. Pour in stages, allowing the water to fully saturate the coffee before adding more. Maintain a consistent pour rate to ensure even extraction.

Once you have poured all the water, allow the coffee to fully drip through the filter. Remove the filter and discard it. Serve your freshly brewed coffee and savor the rich flavors and aromas.
